Coulotte Steak is cut from the Sirloin Cap muscle, which is the outside of the back hip of the animal. It consists of a tender steak with a large fat cap, almost similar to a New York Strip. Also known as Picanha, Coulotte is a classic Brazilian barbecue steak is is best when grilled or pan-seared over high heat. We recommend rendering the fat cap and then cooking the rest of the steak in that fat to get optimal beefy flavor!
